- 40 g cocoa
- 1/2 cup boiling water
- 128 g shortening
- 350 g sugar
- 1 tsp vanilla extract
- 2 eggs
- 270 g all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/3 cups buttermilk or sour milk*
- One-Bowl Chocolate Buttercream Frosting
* To sour milk, use 1 tablespoon plus 1 teaspoon white vinegar plus milk to equal 1 1/3 cups.
- Stir together cocoa and boiling water until smooth. Set aside.
- Heat oven to 350°.
- Grease and flour two 9-inch round baking pans.
- In large mixer bowl, cream shortening, sugar and vanilla until light and fluffy.
- Add eggs; beat well.
- Combine flour, baking soda and salt.
- Add dry mixture to creamed mixture alternately with milk.
- Blend in cocoa mixture.
- Pour into prepared pans.
- Bake 35-40 min or until tested done.
- Cool ten minutes before removing from pans to cool completely on rack.
