- 4 cups peeled, thinly sliced peaches (4-5 peaches, depending on size)
- 2 cups sugar, divided
- 1/2 cup water
- 1/2 cup butter
- 1 1/2 cups flour
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 1 1/2 cups milk
- Ground cinnamon
- Score an ‘X ‘ into each peach skin, blanch them one or two at a time in boiling water for 45 seconds, then cool in cold water bath before peeling and slicing thinly.
- Preheat oven to 350 F.
- Combine the peaches, 1 cup sugar, and water in a sauce pan and mix well. Bring to a boil; simmer 10 minutes, then remove from heat.
- Put the butter in a 3-quart baking dish and place in oven to melt.
- In small/medium bowl, combine remaining 1 cup sugar, flour, baking powder, salt and milk (slowly, to prevent clumping).
- Pour mixture over melted butter. Do not stir.
- Spoon fruit on top, pouring syrup in.
- Sprinkle cinnamon on top.
- Bake about 45 min.
