- 1 3/4 c flour
- 2 t baking powder
- 1/2 t salt
- 1/4 c butter, melted
- 1 3/4 c milk
- 1/4 c vegetable oil
- 1/2 t vanilla
- 3 eggs
- 1 T sugar
Heat oven to 200° for holding cooked waffles.
Combine flour, baking powder and salt in small bowl.
Separate the eggs into two large mixing bowls.
Beat the yolks and whisk in the milk, oil, butter and vanilla. Stir in the dry ingredients just until combined.
Whip the egg whites to soft peaks. Add the sugar and whip to stiff peaks. Fold into batter.
Yield: 4-5 waffles
